ceasar salad



here is a super simple recipe for a vegan ceasar salad dressing. the dressing is bright from the lemon juice, pungent from the garlic, fruity from the olive oil and delivers a good kick complements of the freshly ground black pepper. just a tablespoon of vegannaise gives it just a touch of creaminess without making it cloying or overly heavy. if you're looking for a silken tofu type dressing you've come to the wrong place. although i love tofu in all its various guises, i just cannot get over that chalky taste of asceptically packaged silken tofu. it just seems to power on through even the most agressive of seasonings. except of course chocolate. but then you could probably cover chicken droppings with a nice, thick coating of bittersweet chocolate and i'd find it perfectly acceptable...

ceasar salad dressing
2 cloves garlic
1/2 - 1 teaspoon salt
1 teaspoon freshly ground black pepper
1 Tablespoon lemon juice
½ teaspoon dijon mustard
1 Tablespoon vegannaise
1/3 cup olive oil
dash of vegetarian worcestershire sauce (optional)
a few sprinkles of kelp powder (optional)

put garlic through a press and mash with mustard, salt, pepper, and worcestershire sauce. add vegannaise and olive oil. adjust seasonings to taste and pour over romaine lettuce. top with croutons.

Rae: I don't know what's in vegannaise (though I'm assuming no eggs). But if you keep avocados in the fridge, I think a spoonful or two of avocado flesh -- you'd have to mash it or run the dressing through a blender -- would emulsify your dressing nicely and give it a cute green tinge.
I love the idea of kelp powder for that "oceany" taste. I was once at a restaurant where a couple sent back their Caesar salad because it tasted "fishy." Heh.

I'm a big caesar salad lover. I am definitely going to try your dressing. It sounds perfect.
I was at a vegan restaurant and had a caesar with an avacado dressing which was mighty tasty, so I might try cookiecrumb's idea as well.
Oh, and I'm with ya on the chocolate.

That sounds really good. I've been using just Veganaise for dressing lately, but I'd love a Ceaser dressing taste. I might be able to find the vegan worchestershire sauce. Not sure. ;)

cookiecrumb: yeah, vegannise is a mayo sub and you know what, it tastes good! as for the avocado idea, that sounds fab, i'm going to have to try that out!

harmonia: the worchestiershire sauce is totally optional...just make it without!

umm I'm sorry am I stupid or is Worcestershire sauce only made with veggis and sugar?

Hi and thaaaanks for the recipe! I'm mostly vegan too and even if I wanted to cheat I can't because I'm lactose intolerant. So I was really missing ceasar salad. Thanks so much!

I made this dressing for my boyfriend and I the other night. He loves ceasar salads, but I'm vegan so we never get to share them. he said that this is one the best ceasars he ahs ever had vegan or non-vegan. We are making it again tonight for a potluck. Thank you!!! Fresh lemon juice really makes a difference.

You Culinary Diva! This is the best ceasar ever. I ate with such gusto I got dressing in my eye. I substituted flax oil for the olive oil, because we vegans need our Omega-3's. Thanks for the bit of heaven. -Tina

FYI..worchestershire often has fish oil, so if you want a strict veggie diet, find the vegetarian version in health food stores..i learned this due to seafood allergies...many sauces & dressings have fish oil or paste so read the labels
